Ingredients:

1/3 cup semisweet mint chocolate

1/4 cup unsweetened cocoa

1 morsels

1/4 cup sifted powdered sugar

4 oz lowfat cream cheese

2 tbsp semisweet mint chocolate

16 oz powdered sugar

1 morsels

Instructions:

  • Place 1/3 cup morsels in a medium glass bowl, microwave high 1 minute
  • Add softened cream cheese to melted morsels, beat at moderate speed
  • Press mixture into a 6-inch square on heavy-duty plastic wrap
  • Remove top sheet of plastic wrap; cut mixture into 48 squares.
  • Roll each
  • Place 2 tablespoons morsels in a heavy-duty zip-top plastic bag, and micro

Note: Store truffles in a single layer in an airtight container in freezer
